The Humble History of the Burger

Think about your favourite burger. Is it a classic cheeseburger with all the fixin's? A towering specialty burger with a unique sauce and toppings? No matter your preference, there's one thing we can all agree on: the burger is a culinary icon. But where did this delicious creation come from? The history of the burger is a fascinating journey that spans centuries and continents.

Our story begins not with a bun, but with a steak. In the 13th century, Mongol horsemen would tenderize slabs of beef by keeping them under their saddles. When this method was introduced to Russia, it evolved into a dish known as "steak tartare." This raw, chopped beef became popular in the port city of Hamburg, Germany, where sailors discovered it and brought the concept back to the United States in the 19th century.

It was in America that the hamburger as we know it began to take shape. The exact inventor is a matter of debate, with several people laying claim to the title.

 * Louis Lassen: Many historians credit Louis Lassen, a Danish immigrant in New Haven, Connecticut, with serving the first hamburger sandwich in 1900. When a customer requested a quick meal he could eat on the go, Lassen allegedly put his ground beef patty between two slices of bread.

 * Charlie Nagreen: Another contender is Charlie Nagreen, who, at the age of 15, sold a flattened meatball between two slices of bread at the Outagamie County Fair in Wisconsin in 1885. He called it a "hamburger sandwich."

 * The Menches Brothers: Frank and Charles Menches from Akron, Ohio, are said to have sold a "ground beef sandwich" at the Erie County Fair in Hamburg, New York, in 1885. The story goes that they ran out of pork sausage and, in a pinch, used ground beef instead, naming the sandwich after the town.

Regardless of who created it, the hamburger's popularity soared in the early 20th century. The invention of the hamburger bun, ketchup, and processed cheese slices made the burger a convenient, affordable, and delicious meal for the masses. It became a staple at fairs, diners, and, eventually, fast-food restaurants.

Here at Cawsburger Hitchin, we're proud to be part of the burger's incredible legacy. Our story began during lockdown, when founders Charlie and Matt, both fed up with the lack of quality burgers in Hertfordshire, set out to perfect the ultimate beef patty. After starting as a pop-up at Groundworks Cafe and selling out every weekend, we found our permanent home in Hitchin's town centre in June 2022.

We've taken the timeless classic and added our own twist, using high-quality ingredients and unique flavor combinations to create a burger that's not just a meal, but an experience. We believe that every bite tells a story—a story of innovation, flavour, and the simple joy of a perfectly crafted burger.
